Easy No Bake Cheesecake with Cherry Toppings

I suddenly had this craving for a cheesecake. I wanted a plain cheesecake with no fruit fillings. Just fruits on top. Banapple didn't have a plain cheesecake. Starbucks has blueberries in it. Oh, never mind, this calls for Jewel's powers! lol! Good thing, I have baking stuff here reserved for my red velvet cupcakes which I haven't used yet. Lucky me!

Here goes!

Easy No Bake Cheesecake with Cherry Toppings




Ingredients:

For the Crust:

  • 1 1/2 cups crushed Graham crackers. (or whole Grahams, then crush with a rolling pin)
  • 6 Tbsps unsalted butter, melted
  • 2 1/2 Tbsps granulated white sugar
Cream cheese Filling:
  • 225 grams Magnolia Cream cheese at room temperature
  • 1/4 cup granulated white sugar
  • 1 tsp Vanilla extract
  • 1 cup heavy whip cream (preferably with 40% fat to stabilize the filling better)
Toppings:
  • cherries
  • cherry syrup (optional)
How to do it:
  • For the crust: Mix together together in a bowl the crushed Graham crackers, melted butter and sugar.

  • Make sure the butter and sugar are incorporated well with the crushed grahams.
  • Transfer to a mold.
  • Spread evenly and press well on the bottom and sides.
  • Cover with plastic and refrigerate for about 15 minutes.

  • Filling: Put cream cheese in a mixing bowl. Beat until  smooth.
  • Add the sugar and beat until fluffy.
  • Add the vanilla extract. Beat.
  • Set aside.
  • In another bowl, pour heavy cream and beat until soft peaks form.
  • Fold in or beat heavy whipped cream to the cream cheese mixture.

  • Scrape all sides, fold and mix well.
  • Pour cream cheese filling into the chilled graham crust.

  • Cover and refrigerate for about several hours or overnight.
  • Before serving. top with cherries and syrup (you may use blueberries or any fruit of your choice)

  • Done!
