Kim's Healthy Lunch Day 2-Chicken and Veggies

I have shared Day 1 of Kim's Healthy Diet Menu plus Day 2 BreakfastKim, my daughter-in-law, is  targetting a sexier figure this Summer. For me, she is sexy the way she is now, but she feels she needs to lose some more to go back to her old figure. :)

What I am about to share now was the Day 2 Lunch we had today.

Kim's Day 2 Healthy Diet Lunch. Chicken Breast Fillet and Bacon Ham with Vegetable Sidings.


Chicken was seasoned with just a bit of soy sauce, then fried with a little olive oil. The veggies were steamed. Bacon ham was served as is, cold cuts. Yummy! The chicken tasted so good! I wouldn't mind eating another piece! Shhhh..... "wink." We had fruits for dessert. No need for rice :)

Kim had the same lunch except that her chicken was  seasoned with a little amount of salt and boiled.

Golden Pancit Bihon Guisado

Happy one-week of blogging to me! Since this calls for a celebration (for me,that is! "grin"), I will be sharing to you my version of  Golden Pancit Bihon . Yes, golden! I like my pancit bihon's transparent noodles glistening like gold.
I am not a chef by profession, nor a professional cook. I do a lot of homecooking for my loved ones. That's probably the difference between homecooking and fine-dining. When I cook, I do it with love and a dash of passion.
 Bihon or Rice stick noodles, are said to have originated from China. In Filipino celebrations, this is always part of the menu. Let me share you my version. :)

GOLDEN PANCIT BIHON GUISADO





Ingredients:



  • 1/2 kilo bihon or rice stick noodles (you may submerge this in warm water for 10 minutes if you are not sure how to calculate cooking it directly. )
  • 1/4 kilo chicken fillet cut in strips
  • /4 kilo pork, cubed or cut in strips
  • 1/4 kilo liver, cubed or cut in strips
  • 4 cloves garlic,minced
  • 1 onion, quartered
  • Baguio beans, carrots, cabbage (depending on your preference. You may put other vegetables,too.)
  • Salt, pepper, fish sauce, soy sauce
  • Pork or chicken cube (optional)
  • MSG (optional)
  • Annato powder or "Atchuete" (optional)

TOPPINGS:

  • Fried squid balls
  • 1 scrambled egg, sliced in strips
  • Peanuts
  • Calamansi or lemon

Let's cook!

  • Saute garlic, then onions


  • Add pork, then add chicken strips. Mix and saute. 


  • Brown on all sides.


  • Add liver. Mix well and make sure liver is not over-fried,otherwise it will toughen.

  • Season with salt, pepper, fish sauce, pork or chicken cubes (optional), soy sauce, annato powder (optional). I put annato powder or "atchuete" to achieve the golden look.
  • Add the carrots, baguio beans, and cabbage, in that order. Make sure they are half-cooked.







  •  Set aside about half of the meat and veggies.
  •  Put 4 cups of water. Let boil. Taste and season again according to your taste.

  • Add the rice stick noodles. Mix well and make sure they are submerged well for even cooking. Let the noodles absorb all the liquid.



  • After mixing thoroughly and the noodles are cooked, transfer to a serving platter.
  • Top with the veggies set aside earlier, the fried squid balls, scrambled eggs and peanuts. DONE! :)




My Golden Pancit Bihon Guisado topped with fried squid balls, scrambled eggs and peanuts. Squeeze some calamansi or lemon if need be. One ingredient that is not here which I usually put also is prawn. I love prawns, too!

Kim's Bacon Ham and Egg Healthy Breakfast- 2nd Day

This morning, Kim made bacon ham and eggs for breakfast. Healthy in the sense that there are no seasonings added, except for apple cider vinegar. The eggs were poached, no salt added. We also had vegetable salad with vignairette dressing. We had fruits for dessert! We're beginning to like this diet plan!





Hmmm....satisfied with the breakfast and I didn't feel bloated! Can't wait what's going to be for lunch!

Kim's Healthy Steamed Chicken for Lunch (Cleansing)

I shared with you Kim's healthy salad and breakfast. Guess, I will continue to share Phase 1 of her diet plan, Colon-cleansing, which I know will benefit a lot of us. "wink"
For lunch yesterday, Kim made Steamed Chicken with vegetable sidings. No seasonings added, just apple cider vinegar! Others might say, "yuckkkkkk!" Surprisingly, it tasted good.

Kim's Healthy Steamed Chicken



Ingredients:

  • Prepare and set aside a bowl or cup of fruits.
  • a few pieces of deboned chicken breasts (washed thoroughly and cut according to your preference)
  • 1 1/2 cups of apple cider vinegar
  • for sidings: Steamed carrots, broccoli, cauliflower (you may use other vegetables)



How to do it :




  • Marinate chicken breast fillets in apple cider vinegar for 15-20 minutes.
  • Steam until chicken is soft and cooked.
  • Transfer in individual plates. Arrange beautifully along with the steamed vegetables and cup or bowl of fruits. This will make it appealing to the eyes,too! 

The chicken turned out soft and juicy with a tangy taste. The steamed broccoli, carrots and cauliflower complemented the steamed chicken. No need for rice. Plus, a cup or bowl of fruits for dessert :)Hope you continue to follow my posts on healthy eating and more! This is just Phase 1 of Kim's Diet Plan.I will still be sharing regular food recipes. A Delicious, Healthy Tummy-filling Breakfast

I woke up a bit late at 7:30 AM. I usually wake up around 6 AM or earlier. Carl and Kim were back from work already and Kim was already preparing breakfast. I knew she was preparing another healthy menu. :)
Let me share with you the breakfast we had! It sure was delish,healthy and tummy-filling!







This was my plate prepared and filled by Kim. Carl had the same, as well. It had pineapple slices, ripe bananas cut in circles. In the bowl was poached egg seasoned with salt, topped with jullienned carrots and cucumber. Hers did not have salt. She is avoiding salt and other seasonings in her diet, except for Apple Cider Vinegar.

Let me give you a peek at Kim's diet cupboard. Hope this gave you an idea on some of the things you may want to stock when you want to eat healthy and to lose some pounds.

Kim's Crisp, Crunchy Vegetable Salad

Dinner tonight is a combination of breaded chicken drumsticks, rice; and creamy mushroom soup. However, my daughter-in-law Kim is strictly adhering to a new diet-plan, to revert to her former figure. She's not fat, mind you, it's just that she gained a few pounds after 2 kids 😊
So, for dinner, she made this crisp, crunchy, raw salad of romaine lettuce, carrots,cucumber, tomatoes and added grapes and slices of apple to add sweetness. She also used vinaigrette dressing.

Chicken Curry Recipe

Kyla was home for the weekend and requested me to cook one of her favorites, Chicken Curry.Of course, wish granted. This is supposedly a Thai dish. There are a lot of versions already in cooking this. In my chicken curry, I put eggplants instead of carrots. This is to make a variation from the usual potatoes and carrots when cooking Afritada and Mechado. I also used evaporated milk instead of coconut milk, but if coconut milk is available, I use it also. So, check the cupboard for the following:

CHICKEN CURRY

Ingredients: 

  • 1 kilo chicken (I used chicken thighs, quartered)
  • 6 medium-sized potatoes, quartered
  • 4 pieces eggplants, sliced diagonally
  • 1 can evaporated milk
  • 4 cloves garlic,minced
  • 1 onion, chopped
  • 1 thumb of ginger,sliced into strips
  • 2 tomatoes,quartered
  • 4 Tbsps curry powder
  • 1 Tbsp fish sauce (patis)
  • salt and pepper
  • cooking oil
  • water for soaking the potatoes













Let's cook!


  • Prepare all the ingredients, make sure the chicken and the vegetables are washed well.
  • Saute the garlic, then the onions, ginger and tomatoes. Hmmm... can you smell the aroma?
  • Put the chicken slices. Saute until they turn brown. Remember, put drumsticks first because they take longer to cook.
  • Add the curry powder. (I put more,sometimes,to make it more spicy)
  • Add fish sauce, salt and pepper according to your preference. (you may also add chili powder)
  • Wait for the juices to come out of the chicken.
  • Put the potatoes and eggplants.
  • Pour the evaporated milk and let boil.
  • Add msg (optional)
  • Simmer for a few minutes. Check the chicken and vegetables if they are soft and ready.
  • Choose a beautiful serving bowl.
  • Serve with rice and ice-cold drinks!

Sunday Tour at Clark, Pampanga: 1st Stop at CIMS (Clark International Motor Show)

We love going to different places, trying out new restaurants, going to events and of course...shopping! Being new in Clark, we still have a lot of exploring to do. Yes, with my son,Carl, my daughter-in-law,Kim and their two little ones, Karylle and Keandra, whom I adore so much! <3

All roads led to Clark, Pampanga last weekend. Hotels were fully-booked! Why? The RED HOT CHILI PEPPERS! My son,Carl wanted to watch the Red Hot Chili Peppers' concert but the tickets were way beyond practical if all of us would go.He decided not to go anyway. Heard that it was a huge success! Audience got their money's worth.Front acts were Filipino bands Itchyworms and Rocksteddy; Radioactive Sago Project, and Up Dharma Down.

Anyway, our own tour began by going to the CIMS (Clark International Motor Show.) Entrance was P100 each. It was a display of expensive cars, vintage cars,concept cars, motorcycles and more. We didn't wait for the announcement of the winners.The 2 kids wanted to go kid-exciting! (Lol)















Sunday Tour: 2nd Stop: CREAMLINE ICE CREAM HOUSE

Our first stop at the Clark International Motor Show was fine but not exciting for the two kids, so off we went to the kid-exciting Creamline Ice Cream House located also at Clarkfield,Pampanga.
It was also their ice cream factory. The ice cream had different flavors like: "Sapin-sapin", a Filipino delicacy; Dulce de Leche; Peanut butter;Cookies and Cream;Coffee, to name a few. Hmmm..they were good and not so sweet! 

The ice cream-on-sticks looked so colorful and so inviting! They looked like fondant cakes,so nice to look at! So, there, another place to go back to here in Clark,Pampanga where the kids would really enjoy! :
