Soy Chicken with Star Anise and Ginger


Haven't blogged for a few days because I have been busy with our Bangkok trip which I will blog also. :)

Anyway, for lunch today, I decided to cook Soy Chicken and add star anise and ginger. There are other versions of this recipe and am sharing this for those who are still learning to cook and, for those who want to experiment on new recipes,as well.


This yummy chicken dish is easy to cook! An originally Chinese dish. Let's start!

SOY CHICKEN with STAR ANISE and GINGER

Ingredients:

  • 1 kilo chicken breast sliced diagonally. 
  • 1 1/2" fresh ginger, peeled and cut into strips
  • 4 cloves chopped garlic
  • 1 medium-sized onion, quartered
  • Salt, pepper, fish sauce, MSG (optional)
  • 2 pieces star anise
  • 2 Tbsps. cornstarch dissolved in 1/4 cup water (for thickening the sauce and may be optional)

Soy Mixture: (Mix together)
  • 1 cup soy sauce
  • 1/2 cup Hoisin sauce
  • 1/8 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup rice wine vinegar
  • 1 1/2 cups chicken broth or 1 1/2 cup water plus 1 chicken bouillon
Let's cook!



  • Heat oil in a pan and brown chicken pieces by batch so as not to overcrowd them. Set aside.
  • Saute garlic, then add ginger. 
The aroma will fill the kitchen, hmmm...
  • Pour the Soy mixture and stir well. Let boil.
  • Season to taste.
  • If you want a thick sauce, add in the cornstarch mixture.
  • Put the chicken set aside earlier.
  • Allow the sauce to seep in the chicken slices. Mix and stir until the chicken are coated by the sauce.
  • Serve with rice and ice-cold drinks! Done!

Note:
You may replace the chicken breasts with drumstick or thighs. You may also opt to roast the chicken first instead of frying, before adding to the soy mixture.
