Friday's Jack Daniel's Glaze-Inspired Spare Ribs

If there's something we like at Friday's, it's good food. An American resto, a bit pricey, but worth it. I bought spare ribs intending to just barbecue it, when I saw my son's Jack Daniel's. My son is not really a drinker, he takes sips only on occasions and the bottle of JD here is still 3/4 full. Remembering our fave baby back ribs and spare ribs at TGIF, I searched the web and decided I'll try to make a version of it. It's not a copy, just JD'S glaze-inspired version. For this, I used our Turbo broiler. You may oven bake it also, just make sure you line the pan with foil to catch the drippings :)

Friday's Jack Daniel's Glaze-inspired Spare Ribs
Ingredients:
Dry Mixture:
- 1 slab spare ribs
- 3 tsp pepper and 2 tsp salt
- 2 tsp chili powder
- 2 tsp minced onions
- 3 pieces laurel leaves
- 5 cloves garlic, minced
JD Glaze:
- 4 Tbsp soy sauce
- 1 cup pineapple juice
- 3 Tbsp olive oil
- 4 Tbsp lemon juice
- 3 Tbsp Jack Daniel whiskey
- 1/ 2 cup grated ginger
- 1 cup brown sugar
- 5 tbsp minced onions
- 6 cloves crushed garlic
- 2 Tbsp chili powder
- 3 pieces chopped red chili peppers
- 2 Tbsp cornstarch dissolved in 1/4 cup water
Let's cook!
- Wash the slab well. Remove the thin membrane at the back of the ribs if you want a fall-off the bone spare ribs.
- Rub the slab liberally with the dry mixture.
- Wrap with foil and marinate for 1 hour (or overnight if you're not in a hurry, although lessen the salt first) inside the fridge.
- Combine the JD glaze ingredients (except for the cornstarch mixture) and boil the JD glaze mixture for 5 minutes.
- Add the cornstarch mixture. Check taste for seasonings. It should be spicy-sweet.
- When the sauce has thickened. Turn off heat.
- Unwrap spare ribs slab.
- Brush with the JD glaze front and back.
- Spread in the Turbo rack. Set it to 150 degrees C, 30 minutes.
- After 30 minutes, brush the slab again with the JD glaze and cook for another 10 minutes.
- Done! Transfer in a serving platter and serve with steamed veggies, fried potato rings, rice or whatever you like. You may want to top it again with the JD glaze. Don't forget the ice-cold drinks! Lots of it!
Note: If you want more kick, spike it with 1/4 to 1/2 cup JD, instead ;)
