The other food on the table last Sunday, aside from Dalagang Bukid with Mayo and toasted garlic, was Chicken Afritada. It's another family favorite! It may have a Spanish-sounding name, but it is a dish served in Filipino tables, whether there is an occasion or not.
CHICKEN AFRITADA
Ingredients:
The other food on the table last Sunday, aside from Dalagang Bukid with Mayo and toasted garlic, was Chicken Afritada. It's another family favorite! It may have a Spanish-sounding name, but it is a dish served in Filipino tables, whether there is an occasion or not.
CHICKEN AFRITADA
- 1 kilo chicken pieces
- 4 cloves garlic, minced
- 1 onion, sliced
- 1/2 cup tomato sauce
- 1 pack small potatoes, skinned
- 2 carrots, sliced to desired size
- 10 pieces Baguio beans
- salt, pepper, MSG
- 2 bell peppers, quartered
How to do it:
- Heat oil in pan.
- Saute garlic, then onions.
- Pour the tomato sauce and stir.
- Add the chicken pieces. Fry and brown and allow the sauce to seep in.
- Season with fish sauce.
- Add the carrots, then the potatoes.
- Cover.
- Add salt, pepper and MSG,
- Put the baguio beans
- Lower the heat and allow to simmer.
- Wait for the sauce to thicken.
- Check for seasonings.
- When the veggies and chicken are ready, turn off heat.
- Transfer to a serving bowl.
Serve with rice and ice-cold drinks!
Note:
- You may use annato powder instead of tomato sauce, or you may use both to enhance the color of the food.
- I usually choose the thighs and drumstick parts of the chicken but you can use your preferred chicken parts.
- Potatoes may be fried first, set aside and be added upon serving.
