Spicy Pork Binagoongan (Pork with Shrimp Paste)
Spicy Pork Binagoongan or Binagoongang Baboy is a Filipino dish that is so delicious you'll keep craving for it once you taste it. Pork is cooked with shrimp paste (bagoong.)
Bagoong is a Philippine condiment made of partially or completely fermented fish or ground shrimp in salt. The fermentation process results in fish sauce. Shrimp paste can be found in most Asian meals.(Wikipedia).
Curried recipes also contain shrimp paste. That's how in demand shrimp paste is. It can be a dip for raw mangoes, an ingredient in another Filipino dish, Pakbet and a lot more. You may have heard of Bagoong rice, too. A dish I first tasted at Sukothai.

SPICY PORK BINAGOONGAN (Binagoongang Baboy)
- 1 kilo pork cubes (menudo cut)
- 1/2 cup bagoong or shrimp paste
- 4 cloves garlic, chopped
- 2 medium-sized tomatoes, quartered
- 1 onion, quartered
- 2 pieces banana peppers,sliced diagonally
- 4 pieces red chillies, chopped
- 1 tsp ground pepper
- 1 tsp vinegar
- MSG optional
How to cook:
- Next, fry the leaner meat pieces, then set aside.
- If the liquid has totally evaporated, use the same pan, add cooking oil.
- Saute garlic. Then tomatoes. Mash the tomatoes while frying. Add the onions and stir until it turns translucent.
- Add the shrimp paste. Mix well. Stirring and making sure the ingredients are incorporated well.
- Add the vinegar.
- Put in the fried pork pieces. Stir and mix.
- Add the banana peppers and red chillies.
- Continue stir frying until the shrimp paste has fully coated the pork pieces.
- Check the taste for seasonings.
- Turn off heat.
- Serve hot with lots of rice! Oh, and drinks, too!
Notes:
- You may add coconut cream.
- If you want it to be spicy sweet, add about 2 Tsp of sugar.
