MY "NOT A KITKAT CAKE "


13 year-old Kyla wants me to bake a Kitkat cake for her birthday on December. Hmmm...no need to wait for December! I have other plans for her birthday. Maybe a beautiful 2 layer fondant cake? Hopefully! That's why be a good girl Kyla! "wink"

Anyway, I decided to make my version of the Kitkat cake without using Kitkat but other chocolates, instead. AND cheaper,too! Since there is no occassion anyway. Mind you, this is not my original recipe, but a borrowed one from the ever reliable- google. ;)

This cake is so rich and indulgent! Chocolate bars and Nips candies! I got the brand of the chocolate from a friend in our BHM group. Hello chocolate-covered wafers is lower priced
 and Nips candies are lower priced than the imported Kitkat. This is a budget-friendly version of the famous KITKAT cake that everybody loves!

The only problem I encountered in making this is the hot climate here. Being Summer, the heat easily melts any frosting you make for cakes. Nevertheless, I put the cake inside the fridge right away. You will notice in the picture that some chocolate bars have melted a bit already. ;)

Let's start!

MY "NOT A KITKAT CAKE "

Ingredients:

Cake:
  • Any cake you want. I used a devil's food cake mix.
  • 3 eggs
  • vegetable oil
  • milk
  • 2 - 9" pans, greased with butter or line with parchment paper or just wax paper.
Decorations:
  • 4 packs Hello chocolate wafers
  • 16 pieces Nips sachets
  • any ribbon
Frosting/ Filling:

  • 1 cup butter (250 g. or simply 1 block of butter, cut in cubes for easy melting)
  • 3-4 cups powdered or confectioner's sugar
  • 1/2 cup unsweetened cocoa. (I use Hershey's)
  • 1-2 Tbsp milk
  • 1 tsp vanilla extract




How to:

CAKE:

  • You may use any cake base. I used a cake mix here because I was after the cake decoration. I just followed the cake mix instructions. :)

  • Divide the batter in 2- 9" pans.

  • Bake until toothpick inserted comes out clean. (around 20-30 minutes)
  • After baking, cool pans in wire racks.
  • Loosen the sides and remove from the baking pan.

FROSTING and FILLING:


  • In a mixing bowl, melt butter until fluffy using a mixer.
  • Add the other dry ingredients. Beat on low and scrape sides once in a while.
  • Mix well.
  • Add milk and vanilla extract. Beat until you reach the desired consistency.
PUTTING TOGETHER:
  • Spread filling on one of the cooled cakes.




  • Cover with the other cake.



  •  Frost the whole cake.

  • Stick the Kitkat or Choco wafers around the cake, making it look like a fence.

  • Tie a ribbon around it to help them hold together.
  • Fill the top of the cake with M&Ms or Nips. You may add peanuts, too,



  • You can make variations by filing the top of the cake with sugar flowers, gum paste characters to make it look like a pool or pond. 
  • Done!
So easy yet very nice, right?
